beef brisket fat trimmings

does anyone use the fat they trim off their brisket or do you just disgard it?  I have 1-2 #s of fat.  I just hate to waste.

    You could render it into tallow. Don't know if you'd use it, though. If I'm going to use saturated fat, I go for butter or duck fat. Tallow does have a high smoke point, though.

    Use it with Deer Meat to make deer burger

  • Use in deer sausage or render down into tallow for old-school french fries.
