Bacon Cheeseburgers

Normally, I wouldn't create a posting talking about burgers, but I'm making an exception for this one.  A few backs I cold smoked a bunch of cheese and last weekend I cold smoked some bacon.  Additionally, I was able to locate a Dizzy Pig dealer when traveling for work and picked up seasonings.  So last night, I decided to combine the projects into a single meal.  Sprinkled the burgers with Cow Lick and the burgers were a hit with SWMBO and a couple of friends we had over.  Here are the results.

  • That looks great, what did you use for the cold smoke?
    I raise my kids, cook and golf.  When work gets in the way I'm pissed, I'm pissed off 48 weeks a year.
    Inbetween Iowa and Colorado, not close to anything remotely entertaining outside of football season.

    That looks great, what did you use for the cold smoke?
    With the cheese I used an AMS pellet smoker with maple pellets.  For the bacon, I did 4 types, the Charchuterie's recipes for savory and maple and two smoke with apple pellets and hickory pellets.  So I ended up with a batch of each savory and maple smoked with apple, and a batch of maple and savory smoked with hickory.  The ones on the burgers are savory hickory.

    @rebellab I don't know about that.  I just study up on what others on forum are doing and try to match.  Once it gets warmer, I may have to do some more experimenting with my own cooks.  Are you egging in the blizzard this weekend?  I may do some pulled beef on Sunday.
