First Stuffed Tenderloin

I tried my first stuffed tenderloin tonight.  It was quite good.  The family said it was the best Egg dish I've done yet, and possibly my best dish ever.  Used Griffin's stuffing, but added apples in with the sauteed spinach.  Also used Gorgonzola instead of goat cheese.  350, raised direct, 40 minutes until 135.  It was sooooo juicy and flavorful!
