Eggplant Lasagna

    Seafood lasagna:This original one was not done on the BGE, but smaller versions of it have been over the years. Best the next day.

    This dish started in a deep commercial steaming tray metal container and was made as a birthday present for a man if Italian descent, therefore the lasagna was custom made in red, green and white sheets.
     
    INGREDIENTS:  
    Sauce:  
    1 1/2 Cups    Mayonnaise  
    3 8 Ozs Pkg    Cream Cheese  
    2 Cans    Celery, Shrimp Bisque or Mushroom Soup, Cream of Tomato  
    1 Cup    Chenin Blanc Wine  
    3 Pkgs    Spagetti Sauce Spices, W/Mushrooms (Optional)  
    2 24 Ozs Pkg    Sour Cream  
    1 3 1/2 Ozs    Garlic, Minced  
    3-4   Leeks, Split, Washed and Chopped , Sauteed  
    3-4   Yellow, Green or Red Bell Peppers, Diced and Sauteed  
    3-4 Tbs    Cayenne Sauce, liquid  
    1 Pint    Half & Half  
    Sauce Optional:  

      Hearts of Palm  

      Artichole Hearts, Chopped  

      Broccoli Florets Blanched on top of dish  
    Ingredients for Layers  
    2 Lbs    Carrots, Coarseley Shredded  
    4 Lbs    Scallops, Boiled 3-4 Minutes, Chilled Sliced in Half  
     
    3 Lbs    Crab, Cooked, Chopped Coardely  
    5 Lbs    Cheese, Mozarella, Shredded  
    3 Lbs    Cheese, Cheddar  
    1 Lb    Cheese, Pecorino  
    6 Lbs    Cottage Cheese, Coarse, Ricotto or Asagio  
    3 Pkg    Frozen, Peas W Pearl Onions  
    3 Pkg    Frozen, French Cut Green Beans  
    3 Lbs    Zucchinis, Krinkle Cut Diagonal, Blanched  
    Top to Bottom Layered Lasagna and Sauce:  
    Top    Top Layer- Shrimp or Salmon Mousse in mold  
      Cooked Lasagna, Covered with Sauce  

      Mozzarella, Broccolli, Parsley, Little Sauce  
      Cooked Lasagna  

      Scallops, Peas/onions some mixed cheeses, Carrots, Little Sauce  
      Cooked Lasagna  

      Crab, Zuccchinni, Cheeses, Carrots, Little Sauce  
      Cooked Lasagna  

      Green Beans, Carrots, Cheeses Little Sauce  
      Cooked Lasagna, Layer the bottom & Sides with Pasta, Little Sauce.  
     
    Procedure:
    1 The container was brought to room temperature, as it was made the day before to allow the flavors to blend, Covered with aluminum foil and placed in a pre-heated 350°F oven and cooked for 2 -2 1/2 hours. removed and allowed to rest for an hour. Then the seafood mousses were placed on top for presentation.
    2 Separate seafood mousses were made with smoked salmon from Alaska and placed on top of the main dish after it had been removed from the oven and rested for about an hour.
    3 This dish requires advanced planning and many sea foods can be used to include shrimp, clams or white fish.
    4 It is very easy to arrange the veggies anyway you wish and just keep the different sea foods on their own layers. DO NOT mix the seafood or the different flavor will be lost.
     
    Yield: 40#'s in commercial deep container
