Sounds like the perfect time for the "We need another BGE" conversation-need the flexibility etc-beyond that-if you cook ribs with the low&slow method then you can smoke anything at the lower temps adjusting the start-time to align with guesstimated rib finish time. FWIW-
maybe ask her what she likes and dislikes about ribs, her tastes may not be the same as yours. when i cook ribs for a crowd i cook fall apart sweet ribs, for myself and family i cook dry ribs. this is a good recipe for some that dont like a dryer cooked rib.
