I will try to remember this, it isn't like I was taking notes.

The Spouse wanted steaks, so I found some nice thick ones, about a pound each.  I normally go simple with steaks, just cooked direct, but since these were thick I got a little fancier.

Cooked indirect on a half filled XL at 500 until the internal was 80.  I then foiled them and set them aside while I got other things going.  After about 10 minutes I was ready to sear, and they read 85 internal.

Seared direct, with one flip, until the internal was in the low 130's.  Foiled briefly while serving was set up.

Served with asparagus and sweet potato.
