Thin flounder fillets

Any suggestions? Something simple preferable. I have a few thawed and ready to go. Wrapped in bacon? Wrapped in foil? I don't have bay leaves or prosciutto at house. Setup for indirect with plate setter bc doing some dicedpotatoes in stone but can remove for direct easily. Thanks.

    Thin fillets, especially if it's a soft delicate meat like flounder, trout or sole is best pan fried or deep fried.  Look up "trout almondine" or "trout meuniere".  These are popular thin fish dishes in New Orleans, and easy to cook.  Both are delicious.
