<p />Been a tough week at the ranch, and my wife and kids are visiting with family tonight, so when they left at 6pm, I started thinking. There is a new Wegmans about a mile and a half from my house, so I hightailed it over there with no idea what I wanted....except I wanted fish to be a part of it. I was thinking of this Macadamia nut encrusted tilapia they have, but I saw the Sushi counter, and spotted these "Pacific Rolls" with raw tuna that looked perfect. Then I thought I'd get me some fish to cook along with it, but decided to mosey on over to the beef. I found this small (1/2 pound) dry aged NY Strip steak from a local farm, and decided it would go well with the sushi. Done. [p]So I went home and rubbed up the steak, fired up the mini, got it real hot and added a monster chunk of cherry and maple, and let it burn halfway off til the smoke started smelling real nice at a solid 600. Seared 90 seconds a side (about 3 inches from the lava) and rested on a plate. I stuck my thermapen in the center and it was 105. Over the next 10 minutes I watched the internal temp rise from 105 to 126!! Amazing how the external searing continued to transfer to the center. Never had to put it back on.[p]Anyways, a good night in Virginny, and the butterflies enjoyed the day as well. WooDoggies style.[p]Butterfly5.jpg[p]Butterflies3.jpg[p]Butterfly1.jpg[p]Butterfly2.jpg[p]BattleButterfly.jpg[p]This last guy looks like he has done some battles. Anyways, the steak was killer, the sushi hit the spot. Hope yall are doin' some good cookin, and takin an extra minute to smell the roses this weekend![p]Cheers
Chris

    Babyray,
Butterflies are pretty cool. They just basically don't bother anyone. Though if'n you had a lavendar shirt with orangee coneflower spots all over it, I expect you'd be purty popular with the cute little critters. This year they are especially prolific. It really makes a walk in the yard (or in this case a ride around the yard on my riding mower with beer in hand and camera in pocket) much more enjoyable. They don't pay rent, but I don't mind.[p]Glad you enjoyed the Raging drumsticks!
Cheers to you and the missuz!

Chris,[p]That all looks great. [p]My wife took off for a week today leaving me with my best bud, my 4 year old John.[p]After much activity in the cement pond, he went down about 8:30. [p]I pulled a wet aged 1.5 inch ribeye out of the fridge and hit it with a good dose of RedEye. I sank a small chunk of pecan and grilled at 500 for about 10 minutes/side. I had a perfect medium rare(pulled at 125) to go with grilled sugar snap peas(with olive oil and Tsunami Spin) and potatoes au gratin.[p]I cracked a great bottle of wine, Harrison Napa Zin 2001. Hope you had something nice with your meal as well...[p]I gotta learn how to post pics...[p]Congrats on all the great results lately--Jeff[p]

    Chapstick,
Thanks man. I have a cheapo 2 megapixel Canon Powershot A-60 set on Automatic. It does a real nice job, but good photographs are usually because you have good light! Being an artist helps a little with the composition too ;-)[p]Beers!!

    Jeff Hughes,
Sounds like you got the same kinda therapy from cooking that I did!!
Those grilled sugar snaps sound killer. Please tell us more!![p]Funny, I purchased a nice bottle of Samuel Smith's Taddy Porter, but the food smelled so good I forgot about it and went with the Yeungling I had in hand.[p]Posting pix is easy once you find a place to put them.
    Happy SUnday!
