Question about cold smoking bacon with the AMS

Is this feasible in cold weather. In Chicago and in for some freezing temperatures, but don't want to wait till March to try this.

    nolaegghead reminded me that a small 40-60W bulb + the AMS would probably raise the temp just right but I would add - what better than keeping the temp below 40 so there is less worry about micro.

  • what Big Wader said but the AMS raises temps a little on it's own as well. if you are anywhere close to freezing, you should be fine with AMS alone. If you are quite a bit below, then the light bulb would be a nice addition. Once the bacon is out of the cure, you don't have to worry about "safe zone" temps as much. The cure is all about preservation in itself
