Cauliflower Steaks and Chicken Thighs

Not an epic success and not an epic failure.  A decent meal and part of the learning curve.

I've done chicken thighs lots of times, so nothing new there.

I have never done cauliflower.  I looked at a recipe for cauliflower steaks that looked good.  Well the guy must not mind waste or know something I do not.  The cauliflower did not like being cut into steaks.  Once done I scorched them a little.  The end result was palatable but not good enough for company.

Next time I am going to cut the florets and do them in my veggie basket.

    I have done "steaks" with broccoli, but it had a large, wide stem which would keep the florets together like a cross section.  They were a real crowd pleaser especially for the novelty as you got a slice of broccoli about the size of a ladies hand.  

    With that being said, I think you would have to find a pretty special piece of cauliflower to achieve the size and width you were after.

    Try this the Next time you want chicken thighs and cauliflower. Cut the cauliflower into small florets and toss with olive oil and curry powder. Into a CI pan. Chicken thighs dusted with your favorite rub. Place setter legs up, grate, pan of cauliflower, raised grate with the chicken. 400 for about an hour. The cauliflower cooks in the rendered chicken fat and is the best ever.

    i think i got this from centex but my wife loves it.  1 head cauliflower cut into 8 wedges, 1/2 table spoon olive oil drizzled, flip and drizzle the other side with another 1/2 table spoon.  cover in foil tight.  roast at 400ish for 20 mins, remove foil for 10 more minutes then flip and roast a final 10 mins.  salt and pepper to taste.
