Tonight's jelly rolled pork loin - happy days are here!

First of all let me give Mr Toad credit for the basic idea, but instead of three layers I close to jelly roll a 3# pork loin with a long sharp blade. Then a light dusting of Raging River rub followed by a nice coating of Raspberry Chipotle sauce. Then I added small pieces of 1/2 a Golden Delicious apple plus broken pieces of cashews.

Then I rolled it up tight and secured it with 5 pieces of cooking string
followed by bacon and 2 more strings. A final light dusting of Raging River all over and here's "supper to be" for tonight.
