Taste is fantastic. Eating it for lunch as we speak. Recipe is 90% my grandmas. Got the idea of smoking the ducks from talking to my neighbor at my hunting camp. Really adds another layer of flavor to it.
Ain't that a coincidence.........I've got a big pot of duck gumbo on the stove RAT now! I had to use a lowly farm raised duck though. I spatchcocked and smoked the duck yesterday. I used the backbone and scraps to make stock. I smoked the duck and this A.M. I simmered the duck for a couple of hours. I used the liquid for more stock. I just got it gumboed and am patiently waiting for the flavors to blend.
