chops...yes ma'am

The wife called while I as at the butchers and requested chops...so. Evo, s&p and a little garlic. I like to let them sit in lemon juice and pepper but no time.
Green egg, dead animal and alcohol. The "Boro".. TN

    One of our favorites. Marinade for us is lemon juice, EVOO, salt, pepper, garlic (crushed) and oregano - kinda souvlaki chops.....Enjoy!

    If you don't have time to brine. I use Lawreys season salt, Accent and lemon pepper. Pull at 140, always moist and tender.

    Came out good. Slow cook and finish with a sear. Au gratin potatoes, asparagus, cornbread casserole covered in beans.
