Finally got to fire up the egg

Been a busy weekend but I finally got to fire up the egg. Wife had been wanting some ribs so I did up 3 racks of spares.
Turbo cook and peach wood as usual when I do ribs. Used John Henry's Texas Pig Rug. Once they had good pull back and passed the bend test it was time for saucing with 50/50 mix of Blues Hog original and Sonny's Sweet.
Served redneck style on my best paper plate.
Very moist and tender. They passed the single bite through test.
Wife said they were worth the wait. Think I'll consider it a success.
