what temp is the best for salmon on the egg?

    jj,[p]Depends -- whole fish, fillet, or steaks? I do fillets at 250 for a half hour, with lots of smoke. That does not sound like enough time or temp, but it is!

    jj, I do the real small frozen filets (after thawing) at 350 for about 15 minutes. These are only about 1/2" thick.

    I cook Fillets direct on a raised grid @350' for 20 minutes without turning. (skin side down).
    I use hickory wood for smoke, and DP Raging River for spice.
