The recipe calls for 200-225 degrees during the first 3 hours of smoking. Sorry, the same 'ol question .....is that grate or dome temp? Seems too low if using dome temp. But I thought I better ask.

There are 2 or more versions of this recipe out there. The one I keep on file says to use 225* dome temp. for the first 3 hours.......then, bump up to 250*.
