Compound butter under the skin, Cluck and Squeal on top of skin.  Cooked direct on woo.  Place chicken on small at 450 and closed down vents to get to 350.  Rested for maybe 5 minutes (it was late and we were hungry).  Juicy and very tasty.

It's granite, and looks like it's from the same quarry as Little Steven's countertop.  He told me his was mined in the mountains of Tibet and brought down by yaks.  Very expensive !

Yes it is a Silestone with Microban countertop.  Choose this over granite because other half has been known to peel teflon right off the pan, a talent not many possses.  Non-kitchen countertops are granite.

Although I like VI description much better....might be stealing that
    :))

That's what I thought. I agree, however, that VI's description was much more enticing :). I also had to ponder whether or not a yak would fit in a large.
