rack of pork/lumber jack breakfast

I saw all the success everyone was having with rack of pork so I had to give it a try. 350 dome with cherry wood until IT of 141 rested for 20 minutes. I decide to have some this morning as well. Probably the best pork chop I have ever had. Making Cuban sandwiches tonight as well.
