We went shopping today for a fresh turkey. They were either 12 lbs or 18 lbs or larger. We are planning on serving 8-10 adults. I am planning on spatchcocking the turkey. From what I have read a 15 lbs is about the largest spatchcocked on the large. What do I need to do to squeeze the 18 lber in. Spatchcocked on a inverted V-rack? Other idea or not going to fit at all?

Yeah, just drape it over a a v-rack, or use some butcher's twine to make a V. You should be fine.
