Wife is at her mother's house with the two kiddos. They had the baby shower for our 3rd child on the way (boy!)
She decided to stay an extra night so I am going to do my first brisket (16lbs!!) Any tips? thinking of doing at 250 dome temp. Should I rub with mustard and dizzy pig or salt/pepper?
To surprise her I am going to clean the whole house as a surprise for my prego wife. Doing work son!

I'd skip the mustard, On beef I like just salt and pepper or something like Montreal Seasoning

When I did it at 300 it took 1 1/2 hours per pound. As everyone says though, brisket is to temp and to feel as you probe it. Have fun, send pics!When was the last time you did something for the first time? - Zick Boulder, CO

1-1.5 hours is a good estimate. Plan to finish a few hours early and FTC to keep it hot. Leaving yourself plenty of wiggle room time wise will lower your stress level significantly.Amateur Egger; professional rodeo clown. Birmingham, AL
