Well I have been lost in limbo and have not been on the forum is quite some time! Apologies! Got caught up in the Hum Drum as usual! Tip of the hat to VI, Centex, Trav, Mickey and Cass and any other great Eggers if I forgot ya, as I have not been on in awhile and wish to say hi! Kristi got me fired up to make these during the summer (seems so much longer ago). Here's the link ( http://eggheadforum.com/discussion/1141407/bacon-wrapped-stuffed-chicken-thighs ) and I just now got a chance! They turned out great! I had to substitute as I did not have everything I needed and could not find all ingredients at my local place. Stuffed with Laughing Cow Mozzarella, Sundried Tomato cheese, wrapped the thighs and then wrapped the bacon (Black Label Maple Bacon mmmmmmmmmmmmmmmm!) and sprinkled with Cavenders Greek Seasoning. Phenomenal!! Kristi your the best. This was my first attempt and I look to improve next time! You were right too! The stuffing combinations are endless! Great eats! Happy Eggin all!

  • If you don't follow her on Twitter or Instagram you should. Not only good info but helpful there as well. Just couple weeks a go I had a friend, also on Twitter, wanting a good chicken parm recipe. Few tweets later and she was sending great info. Fantastic person.

    I have been MIA for a while too. Got a 4 month old baby who has been slowing me down (well my posting, not my cooking).... I am planning to do these chicken thighs tonight. Good to be back.
