We hope you all got to celebrate those tasty food holidays last week, we sure enjoyed them! We are even more excited about the beginning of fall, for so many reasons, but mainly for experiencing the cool, crisp air while being outside cooking up the best recipes the season has to offer. We especially love these Beer Pork Tenderloin and Ground Beef Acorn Squash recipes! Well I have been lost in limbo and have not been on the forum is quite some time! Apologies! Got caught up in the Hum Drum as usual! Tip of the hat to VI, Centex, Trav, Mickey and Cass and any other great Eggers if I forgot ya, as I have not been on in awhile and wish to say hi! Kristi got me fired up to make these during the summer (seems so much longer ago). I had to substitute as I did not have everything I needed and could not find all ingredients at my local place. Stuffed with Laughing Cow Mozzarella, Sundried Tomato cheese, wrapped the thighs and then wrapped the bacon (Black Label Maple Bacon mmmmmmmmmmmmmmmm!) and sprinkled with Cavenders Greek Seasoning. Phenomenal!! Kristi your the best. This was my first attempt and I look to improve next time! You were right too! The stuffing combinations are endless! Great eats! Happy Eggin all!
