Making Eggfest Chili

I just bought a new 10.5 quart stainless steel pot that I used this past weekend to deep fry some corn dogs at the Falcons tailgate. Should I get a cast iron dutch oven or will I be ok using the stainless steel pot tpo make the chili?

A lot of it depends on the bottom. If it is thick you will be OK, thin not so much. Most people do chili indirect, with spacers under the pot so it is more like baking it than cooking on an element.

I'd prefer the CI DO. If, for no other reason, easier to clean when seasoned. And, it may be my imagination, but food seems to taste better from a DO.

Stainless and, to a greater extent, carbon steel conduct heat better than cast iron. It'll work fine, just watch out you don't get the egg too hot or you could get some hot spots and burning inside the pot. Fortunately it's easy to regulate the temp in an egg. Should be no problem in using that.

I would think it would take less time, due to the thin metal. Watch for evaporation/reduction and be prepared to add liquid if it occurs.
