Doing a spatchcock chicken solely for chicken salad. I always use a rub. Any ideas for something different? Maybe more if a herb rub. Thanks.

Curry works very well in chicken salad. So maybe a curry rub.

For poultry, you can't go wrong with salt, pepper, sage, rosemary and thyme. Maybe easy on the rosemary so it doesn't overpower the salad.
