Served like #2 Shanghai Jimmy's Chili Rice was served in his Dallas Chili Parlor, except, on bowls not styrofoam cups

    Put mine over cornbread and I am in girl.
    Salado TX & 30A  FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.

    what are doing up so late?  I currently trying to complete a test that I started this morning.  IF I can complete this tonight then I won't have to spend a week in beautiful downtown MA.  Horrible computer connections.  I am on my last three samples and hopefully I don' get kicked off again. 

    Will be in you neck of the woods tomorrow and the rest of the week.

    He probably owned one of the last "true" Chili parlor in Dallas and he was a character.... He had a restaurant in Shanghai for many years before returning to the states and the stories he could tell we spellbinding.  

    He served chili in a styrofoam cup, bottom layer was onions or celery (never in mine) then chili then another layer ending with a cheese topping.  it was fun to dig down and get every layer on your spoon.

    When cooking chili on the Egg, do you stir to expose more of the chili to the smoke?  Or is most of the smoke coming from cooking the tomatoes and peppers on the Egg?

    I grew up on rice with Wolf Brand Chili on top.  I'm sure your's was much better, but you brought back memories.

    Interesting, Joan. Thanks for sharing. I think there is still one place left that is know for their chili. Keep meaning to make it over there to try it. Just looked it up. Tolbert's in Grapevine.

    Both,  1st hour added Jack Daniels chips and chili was cooked without a lid.

    If you get over there let me know how it is.  Kids live in Lake Highlands, but we will malke a trek over for good chili.
    If you get a chance read Tolbert's "A Bowl of Red" I think you would enjoy it.
