OK, sometimes reading or hearing something strikes a person & allows them to see things from a different perspective. A post from "ChrisNJenn" did that for me, and I admit I've allowed myself to morph into what I don't wanna be. As such, I felt it best to get back to what I originally loved about this forum - the FOOOOOOOD!!
So, I thought I'd resurrect an older post I did because when I originally did it, the format got screwy & the pics weren't oriented properly (apologies to VI for using a crappy phone to snap the pics), and because I don't have any "new" stuff to contribute saved on the computer I'm using (as I stated, I will post some new cooking pics this weekend).
Anyway, I did this a few months ago - went indirect, 250 dome temp, and placed it on a rib rack cuz it wouldn't stand up by itself (didn't want one side on the grate while the other wasn't on the grate).
Anyway, the taste, texture, and smokiness ALL Turned out GREAT!!
As far as the rub & glaze, pretty much followed this recipe:
