How long would you guys feel comfortable putting a spatchcocked bird in the fridge before egging?

Overnight uncovered is all it takes to get the skin crunchy. Maximum length? Dunno. If it starts smellin' funky, that's too long ) I suppose it depends on how old it is to start with.
