    In response to two above - dome temp. Everything dome temp.

    New question - rather than dropping 300 on accessories that may or may not help me accomplish this cook on time, I have the opportunity to buy a medium egg for $400. Will it cook two 7-8 pound shoulders side by side?

    225 dome is going to be closer to 200 than 225 at the cooking grate.

    Seems like 7 pounds would be fine.  Worst case you put one or both on their sides and/or lean them in like a "teepee" shape.

  • Plans have changed - now about 75 people and I've streamlined to make it easier on myself.

    2 pork shoulders

    2 briskets

    6 st louis spares

    4 turkey breasts

    I'll have a large and 2 mediums at the ready. 2nd medium for backup if things get behind. Party in two months.

  • Party in one month. Surprise 30th. I'm redoing the back yard for it and she has no idea. This is fun. Still same game plan as the post immediately preceding this one.

    2 briskets on large at same time as two pork shoulders go on one medium.

    When briskets finish, throw 6 racks of ribs on the large.

    4 turkey breasts on the medium when pork is through cooking. Or two turkey breasts on each medium.

    Points for burnt ends somewhere...

  • It's doable. You can even do the shoulders days in advance. Nothing reheats better than shoulder. I would say to do as much ahead of the party as you can do so you can chill and have fun at the party. All of this will be for naught if you are totally stressed out and running around with a Thermapen like a mental patient when your guests arrive. I would do as much ahead of time as possible,  Vac Seal and reheat in chafing dishes the day of the party. I would probably do the briskets to be ready the day of, but everything else would be ahead of time if it were me. 

    I would guess your wife and friends would rather have a beer with you than watch you cook all day. I think it's totally doable but this is a lot of food with odd timing concerns and all that. I would go for it but try to save yourself all the grief you can so you can enjoy the party.



  • So, just for fun. Party happened June 9. I ended up doing two briskets, two pork shoulders, four turkey breasts, grilled corn on the cob, coal fired sweet potatoes, cole slaw, etc. It was a blast. Used a large and a medium egg and cooked from midnight to about 7pm.

    This was a surprise party for my wife's 30th. Her big day i November 9, but I threw the shindig 5 months early.

    Now, the real big day approaches and it's more special than I thought it would be. If you're interested in helping me with that one, find my thread called "Extra Special Birthday".

    The ham of an Elephant on the large, Then 2hrs later place the neck of a Giraffe on the med. and finish up with the tail of a blue whale. :))

    I wish you the best of luck. I really hope you can do it for the sake of doing it and all the money spent on the meats.

    However trying to do that much cooking on only one Egg in my opinion I think is crazy.
