Turned out really well. DigiQ set to 225 with Hickory & Pecan chunks. 3 hours direct. 1 hour 15 min wrapped with brown sugar, 3 Beer Rub, butter & apple juice/vinegar mixture. Another 1 hour 15 min direct. Glazed with Voodoo Sauce.

Were they tender or a little tough? Seems like they could have pulled from the bone more IMHO.

@michiga_jason - Those are pretty meaty BBs they won't necessarily pull back like spares. 5.5 hours even at 225 is probably great for ribs that thick - especially with over an hour braised in foil.
@war_eagle_2244- Those look fantastic - love to see a cross cut picture if you have one. What's in Voodoo Sauce - I've never seen it.
