I grew up eating the best smoked cheese and fish from a local smokehouse, but after moving it was one of the things I missed most. It's funny how certain smells and flavors stir up memories of home. Well thanks to my wife those are no longer memories. She just bought me a Cold Smoke III that has a mounting bracket that fits my large egg. I haven't smoked fish yet, but the cheese is just like being home, I love this thing I even installed in on my smokehouse, Mmmmm smoking is my new hobby

That is the coolest idea I have seen yet!I have been trying to cold smoke fish since I saw it done on Iron Chief years ago.I tried make shift coolers everything but buying an Ice block but I live I the south and Ice don't do so good,I will look into that website. I think we both have the same egg(xl)

I just smoked sea salt with my Egg and Cold smoker. It was perfect on grilled steak. My wife wants to use some to make salted caramel brownies, can't wait

No I ordered it. It is fully insulated and works perfect. I smoke jerky, sausage, cheese, boston butts and anything I can get my hands on.

No, but I do have a small business that makes bbq sauces and marinades. I guess you could call it a retirement plan.

That is a cool device. I have been thinking about cold smoking in my egg. I saw this thing on the NakedWhiz.com that I was thinking of trying. Haven't found the time or energy yet though.

pmckinney4: The paint can smoker gets the job done and it isn't very difficult to make. I wouldn't part with my setup for anything, primary because it is easy to set up and store. As long as you can cold smoke, that's all that matters. If you have any questions let me know.

This is a hair-brained cold smoker I just built...dunno if it'll work, but I only have about $160 in it outside of stuff I had laying around the shop. The idea is to put the digiQ probe in the cold box, have the AC run full blast and let the digiq feed smoke and heat into the cold box to meet a sub-ambient set point. This setup will not dessicate. But I an also run in slightly above ambient mode (no refrigeration) and it will dessicate. I was going to try it yesterday but got distracted.

that is quite the fabrication, looks great. I lack time and definitely the ability to pull that off. My setup was only $150 and my wife picked it up at our local big green egg store. They had to order the unit so she gave me this picture wrapped in a giant box. Does anyone have any great cold smoke recipes?
