I have a 5lb cut of brisket. Assuming I keep the egg at about 240, about how long you think the cook will go? My guess was around 6-7 hrs.

If you are running around the 240*F (calibrated) on the dome you will likely see around 2 hrs/# to get the flat (assumption here) to the finish-line. Finish-line defined as probe the thickest part of the flat with no resistance, in or out. Enjoy the journey!Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.

My 5lb brisket took 12 hours to get to the correct internal temp. It took much longer than I expected, but was delicious!
