finally got my temp stabilized at 250 start timeing at 7:00 hope to be eating brisket by 5:00 also used pecan chips

cliff n york,[p]You are doing brisket for your first cook?? You've got a lot of guts -- brisket is one of the trickiest items, no matter what kind of cooking machine you are using. Good luck!!

Prof Dan,the brisket was not the problem it was not useing enouhg lump charcoal and adjusting the dampers also it didn't have enough smoke taste. but on the bright side if thats my worst it still beats the bbq in this area
