White meat king salmon
Just returned from my 12th fishing trip to Alaska. In all my previous trips I never knew about king salmon with white flesh. Most of the salmon our group caught were silver salmon (coho) but we did catch 4 king salmon. The man cleaning and processing our fish told me that one of our kings had white flesh and the different color has something with the fish's diet. I googled it and found that somewhere between 1 and 5 % of king salmon have the white flesh. Anyhow I found a couple white fillets in my boxes and they will be dinner on the egg tomorrow night. My wife and I came home with 300 pounds of salmon, halibut, yellow eye and ling cod fillets. Wild caught Alaskan salmon, flash frozen within hours after being caught just can not be beat. I just bought a 20 pound bag of alder chunks, I'm ready.

White Kings are legendary. We caught one once and it was a shock cutting it open and seeing the flesh. My brother thought it was a boot, but I'd heard about them before.

We never got white kings out of lake Ontario. They were kind of a grey green colour

If they don't add the dye to the farmed salmon they have lighter flesh, kinda gray. Does it taste any different? I mean, it's salmon, so it will be delicious regardless of color.

I had white salmon at a restaurant once and it was exceptional. Maybe even a bit richer than regular salmon. My uncle used to have a house on Vancouver island and we would go up and catch kings every year. Pretty much all the dungeness crab you wanted right off his dock also. Talk about eating like a king. I really miss that place.George

Well, last evening I created a smorgasbord of Alaskan flavor. I grilled the white king salmon fillet and a silver salmon fillet on an alder plank with an alder chunk; raging river and maple syrup. At the same time I pan seared ling cod and yellow eye fillets. It was way too much for my wife and I and 2 guests...but it was so delicious that only 3 small pieces were left. None of the white was left The white king was probably the best fish in this old guys lifetime. I think it was the only package of white I brought home.

I keep wanting to try Salmon, but everytime I start to reach for it I remember moms "salmon patties" from a canned fish-like substance. One of these days I'm going to break through the barrier.
