    Just the basic kitchen shears.  Never had a problem, even with a 7 pound roaster.

  • I use kitchen shears but they are not created equally. Basic shears are ok but you will wrestle with the chicken. I bought these Kuhn Rikon shears earlier this year and they are superior.     I would say these are a cut above the standard poultry shears. But now I have relagated the old ones to coarse, non-food jobs. I look like a pro cutting through a chicken spine effortlessly. I have a large super sharp Global chef's knife but would not think of using that over the shears.

  • I use an extremely sharp CutCo hunting knife.

  • Wusthof cleaver.  For dramatic effect.  Admittedly this method takes a bit of practice.
