I like to mix mine with ground up sausage also. I made a dozen last night (sausage, sharp cheddar, cream cheese, and rub as the mixture) for the wife and me.
If you ever make them for guests or kids and think the peppers will be too hot, you can soak the peppers in Sprite overnight and that kills the bite (of course take the seeds and vein out also).
