I have the first batch off and the second batch just started. They both are jalopeno sausage with lava jack cheese. Don't laugh to hard at my setup it works, and of course it is deer.

  • I buy the mix from waltons out of emporia, Ks. they used to be midwestern research.  Any way it is a excalibur mix that does 25#. The lava jack cheese I bought from butcher-packer.

    Somewhere right around 200. Hard to tell since it has been pouring rain all day. I have a bucket over the daisy wheel and the egg is swamped water about to run out the draft door? I guess it just wicking through my gasket. Annoying.
