Ok- have seen too many great looking cooks on paella and I guess I am going to have to add a new accessory. Which one do you all have and do you like it? Carbon steel, stainless?

I received an enameled steel pan as a gift and have no issues. Holds heat well and easy to clean for the next round. I would get the largest that will fit in your BGE at the raised grid level. FWIW-
You need to go to the paella pans link with the max diameter of your BGE around the raised grid level. They have dimensions (diameter and with handles) of many pans.
