So reached into the stash of ARS (grouper up next) and did up a few filets last night. I decided to blacken one and grill the other two. It was my first time blackening on the BGE. The blacken'd filet was good but I did not have enough clarified butter but it was still pretty good. For the grilled filets, the one with less seasoning came out the best. Goes to show when you got great piece of fish....dont mess with it. Anyway they were all good and enjoyed a great meal. I paired it with mixed green salad with maytag blue cheese and fresh crumbled bacon and Penne w/Alfredo. The cheeses in the two sides clashed a little bit and wont pair those again. Anyways, had a great time!
