Help with Pig Shots
Football season is getting closer - starting to focus more on cooking.....
I want to make Pig Shots for an appetizer this weekend. I saw the recipe for the filling a few months ago - but cannot find the post.
Have tried searching - found pics of them - but not enough to help with the filling options.
Can someone assist?

Do a google search for "pig shots" as there are many, many different combinations for fillings. Cream cheese is about the only thing the same in all of them.

Recipe
Ingredients:
Nathan’s Beef Kielbasa – qty 2
Bacon 16 oz packages – qty 2
Cream Cheese – 8 oz
Mexican 4-cheese blend – 1/2 cup
Green Chiles Diced – 3 oz
Brown Sugar – ½ cup
Chili Powder – ½ tsp
Cayenne Pepper – ½ tsp
BBQ Rub - ½ tsp + a light dustingPreparation:
Cut sausage down to discs about 3/8” thick.
Wrap ½ slice of bacon around the disc and fix in place with a toothpick or skewer several “shots” (10” skewer can hold 4-5 shots).
Soften cream cheese and mix in cheese blend and chiles
Pipe or spoon the cream cheese blend into the shot
Mix the brown sugar, chili powder, and cayenne pepper together and sprinkle on top of cream cheese filling
Lightly sprinkle with BBQ rub
Cook indirect around 280-320 degrees until bacon has crisped up (approx 70-90 minutes). Smoke wood is optional.

My last attempt I used a combination of goat cheese, cheddar, cumin and chili powder. They turn out great. That is what we had on hand in the frig.Edina, MN

I tried to make these a couple of weeks ago. Be sure to buy good quality, lean and thick bacon. All I had on hand was breakfast bacon and it was too thin and fatty.
I plan on making these again for football season as well. Good luck.

They are pretty damn good but like ABT can customize. Tho I gotta imagine on the healthy scale they are scraping the bottom ha. At least ABT has a piece of vegetable lolBoom
