beef short rib recipe
edited August 2012
Does anyone have a good, easy beef short rib recipe. Thanks so much in advance
I haven't done these on the Egg and would also be curious as to any thoughts or recipes people have.
More importantly, I would be interested in the general concepts of cooking these on the Egg. I assume low and slow, but how long and at what temp? Sauce on top? (I'm used to braising these in their own sauce.)
Once I cooked these like I would ribs -- just salt and pepper and about 5 hours at 300 or so. They were awesome.
I cooked some up yesterday on the medium. They weren't too big at all. 300F for 3 hours, moist, tender and flavorful. I did not foil, braise or baste em. Just rubbed them down and let her rip.

I like Chris Lilly's version for beef short ribs.
It is in his Big Bob Gibson's BBQ book or you can find it here:
We've made it a few times, good stuff.
Wow, nibble me, that is nice picture. Food porn for sure.
