With all the stuff in the rubs, they should keep longer than they need too. I never had one go bad but I can't say that I waited for one to go bad either.
Why doesnt anyone ever ask how long their eggs and butter are good?
Even if the ribs got moldy they'd still be safe. Quality may drop off after a week. But if tempsxare ok they will be safe. I forgot a steak (cooked) for a couple month onces. Was still fine.
I always thought about an hour or less! Seriously I find the biggest problem with cooked meat stored in the fridge is that it takes on flavour from other things in the fridge, so it tastes better the next day than three days later. Maybe if you have those vacuum sealers it would avoid the problem but we try not to have that many left overs. If we cook for guests we generally share the left overs at the end of the day.
The BBQ classes I've attended stated that any cooked meet will last 7 days in the refrigerator. The. 7 days can be broken up in any desired manner by putting it in the freezer (3 days in refrigerator, 10 days in the freezer, 4 days in the refrigerator).
