I had 2 eggplants in the fridge so I went to the store and bought a new Dutch Oven. Here it is, deep fried eggplant fries. They were amazing!

    I have visions of the oil in a dutch oven bursting into flames in a BGE.  Do you deep fry with lid on or off?

    People worry too much about fire when deep frying. 

    I am not sure if you are able to close the egg dome with your new dutch oven because it is larger, but if you can you can put any fire out in .5 seconds with closing the vents. I truly believe the egg is one of the safest spots to deep fry. Where else can you put a fire out faster then closing a dome and closing the vent?

    However if you can't close the dome at least have the cover ready to put on the dutch oven. Remove from egg if possible then close egg down.

    Just rational fear of a former volunteer fireman.  I understand that the Egg is an excellent snuffer, but saw a few too many kitchens destroyed by grease fires while doing my civic duty in years gone by.

    I did the deep frying with the lid off. The oil didn't even fill half of the pot and I only did small batches at a time, so overflowing the dutch oven wasn't a problem. I removed the fries with a slotted spoon, so the dripping of oil was minimal. It honestly wasn't a problem at all. I did close the dome when the frying was happening, with the exception of removing the food. I don't think I'd leave the dome up because the mass amount of air going into the fire will cause  bigger flames. I also don't think I'd grill something that would flare up while deep frying.

    I'd have to agree that the egg and dutch oven was actually a perfect combo for frying food. No smoke or smell inside.
