Mornin' Eggers,
I picked up a couple of butts from Costo sans bone. Do these cook faster that a butt with bone?

I hate the fact that Costco started carrying the boneless instead of the bone-in they used to carry. I don't find that one cooks faster than the other. Leave yourself plenty of buffer time as you can always store in a cooler if they get ready early.

badbruce, I've done two sets of Costco's double pack boneless butts. Cooked at 235 to 250 grid temp. Both reached 190 internal in about 12 hours. I did not tie each butt to create a more uniform piece. The first set was great, pulled nicely after being in a cooler for couple hours. Second set, a little tough after the cooler drill. Probably had to do with the higher cooking temp. Tom
