If you only had one smoke wood to use...

I am trying to reduce the many smoke woods I have in stock.  So, if you had to pick only one, what would your choice be?  Amplifying comments encouraged as well. 
Louisville; Rolling smoke in the neighbourhood. # 38 for the win.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period.

    I would have to go with Apple...very versatile for my needs since most of my smoking is pork (ribs,butts, loin) - so I like the sweet fruit woods.  I do have to say that I like a little more robust wood for beef which I generally use pecan - but I have never tried apple with beef so it may work good for that too.

    I'm really enjoying Hickory right now. I'm going to try it with poultry (spatch chicken) tonight for the first time and see how it works with that.

    Hickory great for chicken and pork. But Mesquite for steaks so I normally carry 2.

    Oh, they are all awful. You don't need any. Send 'em to me, I'll just burn them away, and help you be rid of them.

    Seriously, I can't imagine having just one. I could get by w. 2, hickory and apple, but think I've never had better ribs than w. oak, or better poultry than pecan.

  • I'm really into oak right now. I dunno, somthing about it is working for me. TFJ agrees. Says it's the best flavor we have ever done. That being said, I'm sure I'll be using something completely different next week

    Apple.  Sweet and fairly mild, works well with pretty much everything.  Pecan would be a very close second.

    I don't think I could have it as my only wood (although that was all we used growing up), but I'm gonna have to step up and throw mesquite in there. I know a lot of you northerners don't like it, but we use it a lot down in S. Texas where it grows like a weed. Hell, what else are you going to do to get rid of it?

  • I don't think I could have it as my only wood (although that was all we used growing up), but I'm gonna have to step up and throw mesquite in there. I know a lot of you northerners don't like it, but we use it a lot down in S. Texas where it grows like a weed. Hell, what else are you going to do to get rid of it?

    nah, the cedar has choked out all the mesquite in the hill country. I was just saying if you wanted to get tid of it, justplant a cedar tree and eventually it will be gone. I love mesquite too. was just being a smartass (shocking, I know)

    since i can pick hickory bark off the tree down the street for free anytime i want it, i pick hickory bark. if i had to buy it cherry (that would give me cherry and free hickory bark
    :D now lookit, i started with one and already have two
    :)) theres oak and maple in the wood pile, and grape hanging on the trellis, cherry pare and apple growing in the yard, even a lilac bush and a rosemary tree. the only thing stored here is a small bag of cherry

  • I like apple, well because I have a few in the yard so no cost.  But one wood is hard to decide on, because I like oak as well. But I can use apple on anything and like it.

    Is pecan-cherry just one wood?
    Salado TX & 30A  FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.

    Mine is Pecan, but the JD chips ARE nice.  If you find a JD Tree, please let me know and I'll plant one of those!!!
