Hello from Tx. Questions about cooking 2 butts

Hi all! I'm new to the forum! Bought my first egg last week....a LBGE. Tonight I will be attempting to cook 2 8# butts for a party tomorrow eveing. I already have the meat prep'd and in the fridge. I already have the egg ready to be fired up! I do have a couple of questions.

First..My plan is to cook at grid temp of 220-250 and putting butts on at 10pm tonight. The party starts at 6pm tomorrow....How is my timing?? Am I starting to early?

Second...I only have one meat probe (Maverick ET-73) but i'm cooking 2 butts. Can I use the one probe temp as a guide for the other butt??
