Decided to try these Zucchini Boats Griffin made last week. After the 4th of July pounds I put on I needed to do something a little healthy.
Ground Turkey,stewed tomatoes, and roasted corn. Mixed it all with the zucchini guts. Cooked it at 350 for almost an 45 MIN with some parmesan chees sprinkled on top.
Did some Bok Choy on the side that I marinated in honey,sirahca,rice wine, and low sodium soy.
Everything tasted great and te wife was very happy I took a Light dinner route.
Will do these again with maybe some changes.

I love the addition of turkey meat.. I don't know what the mince would be like, but I generally buy chicken breast and mince it myself, I imagine I could do the same with turkey..
Have you thought about doing these with eggplant? I think they'll work wonderfully too..... Maybe fill them with the turkey mince, some wild mushrooms, carrots, peppers.....
