Here goes the 1st low and slow pork butts!!

Ok, so it is 11:44 I am a little behind schedule. My parents just left I had to get them to sign their paperwork for listing their home! Anyway, got the lump loaded, cherry chips interspersed throughout. Lit it and letting it really get going before bringing it back down. I filled almost to the top of the fire ring, you think that will be enough?

ok egg still at 300 waiting for it to come down a bit. Ready with the spacer using tin foil under a drip pan on the SS grid and the meat on a raised grid. My hubby went to bed so it's just me, beer, and my dog to keep me company.

Looking good! I'm doing my first overnighter tonight as well, although not my first low and slow. I got my butt on at 10:18pm. temps rock solid, I think I'll get some shut eye soon.

Been holding at 250 for 30mins so far!

Hi! I am doing my first low and slow pork butt tonight. I'm having a very hard time regulating the temp. I am trying to keep the temp around 250 but it wants to stay around 275. I don't want to shut the vent and daisy wheel down too much in fear of smothering out the fire. Any suggestions would be greatly appreciated!

Tap it them very slightly... closing them just a wee bit at a time and allowing time to stabilize before checking again. 275 is high, but not really a screaming problem.

Make small adjustments, wait, and don't worry. Pork butt is very forgiving.

Thank you! I'll tap the vent down a little more and them I've gotta call it a night. I have a temp alarm set so hopefully that will keep me from ruining tomorrows lunch!

Ok crept up to 260 dang I was ready for bed, made a tiny adjustment and well see if it holds. No fancy alarm or temp probe for me :(
