1st time cooking ribs - need more bark next time

Is that picture really early in the cook? What was your dome temp (have you checked the calibration of your dome thermometer by dipping it in boiling water?)?...and how many hours did you cook them?

More rub + less sauce= more bark. Play with that plus the tips above and you'll be fine. Sauce at the very end after the bark has formed to avoid soft bark.Keepin' It Weird in The ATX FBTX

@ njl it was 4 1/2 hours. Temp around 250. I had just sauced them in the pic. There were done, with a little smoke ring. Just not the great bark I want. Thanks

Going to use rig and get dome hotter with more rub next time. -
Sounds like a plan. Don't to too crazy on the rub. It can overpower. Just know that is where the bark comes from so try a little more until you get it where you want it.Keepin' It Weird in The ATX FBTX
