I started my first brisket not long ago.  I followed the directions, but goofed up on one detail: my alarm clock.  I woke up the next morning at 7:00 with dread!  How could I have not set my alarm clock?  I ran outside in my underwear knowing I had ruined it.  But low and behold, the fire was snuffed, but the temp was still above 200. 

 

All I had to do was relight the fire and the brisket turned out great!
