I will be direct grilling tonight....doing some oysters and a big cowboy steak. After I am done grilling direct, I want to put a pork butt on for a long overnight cook. I will let the egg cool down before I put the butt on, but can I place the PS into a warm egg without fear of it cracking? Once the egg gets down to about 350-325°, I'd like to put the butt on and let it continue to cool off.
