I usually aim for 250 but was wondering what others do. Kind of want to try something different. Will be using a DigiQ. Also which method...3-2-1? TIA!

War Beagle - I'm doing some Babybacks today (and have done so for the past few weekends) at 250 grate {with the DigiQ} using the 3-1.5-1 method....I feel like the 2 part of 3-2-1 is too much and leaves the ribs way too mushy. I think it truly depends on the actual slab though....a thicker slab will do fine at 3-2-1 where a thinner slab will do better at 3-1-1 or 3-1.5-1. Either way you do them.....they'll be delicious and crowd pleasers too!
Good luck, and post some pics!

Search turbo ribs (here or the "other" forum) for a different way to cook them. Mickey is an expert with that method-it's hot and quick.Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.

I played with different grate temps but just went back to 250 or lose to it. Don't sweat it much.
